Pu'er tea can breathe, do you believe it?

Pu'er tea can breathe, do you believe it?

Pu'er tea can breathe. The taste of Pu'er, although first of all lies in its internal quality, including the Pu'er tea tree, the production area and the production process, and so on. But in order for a good tea to release a good taste, it also needs to "breathe" fresh air, which is the so-called wake-up tea. Do you know what wake up tea is, how to wake up Pu'er tea? Let's take a look!

Pu'er tea will breathe, do you believe it?

On a cold winter day, soak in a cup of aged Pu'er, which is pleasing to the eyes and refreshing. Make a pot of aged Pu'er and make a step before boiling the soup—wake up the tea, this is very important. The awakening of Pu'er tea is a seemingly simple process, but in fact, there is a lot of attention to awakening tea. Let’s start with "What is Xingcha"!

Pu'er tea can breathe, do you believe it?

awakening tea, basically explained as awakening tea leaves, regenerating the essence, that is, let the sleeping or dusty tea wake up through contact with the air and moisture, absorb the popularity of the world, and regenerate the tea The essence of tea is convenient for brewing and drinking. This process is called "wake up tea".
Pu'er tea will breathe, do you believe it?

Pu'er tea wake up tea is not simple, generally speaking from these aspects.

   One, dry wake, wet wake

Second, the awakening tea with different raw and cooked tea

三. Different wake-up teas between old tea and new tea

Fourth, different grades of raw materials, different wake teas

  5. Tea time before brewing

  1. Dry wake, wet wake

The purpose of Xingcha is to show the best taste of Pu'er tea. Dry wake up, as the name suggests, is the wake up tea of Pu'er tea dry tea.

  1, from closed to open

Whether it’s the whole tea or the whole tea, it can be sealed in a carton; relatively speaking, it is recommended to store Pu'er tea in a relatively airtight environment. . The whole piece of tea is either packed in bamboo baskets and tied tightly with sack, or the carton is tightly sealed. After a long period of time, the tea fell into a "deep sleep"; if you drink it immediately, it will inevitably be dull and even mixed with various peculiar smells. If it is loose tea, leave it open in the air; if it is pressed tea, it needs to continue to be broken down into small pieces; if it is cake tea, it is necessary to keep the strips as complete as possible. Old tea may be very loose, and there is a better chance of keeping the cords intact; usually it is no longer necessary to pry the tea, simply toss it, and it will fall apart.

2, spread out and stand still

Pry loose tea leaves directly placed in an environment with no direct sunlight, no peculiar smell, and air circulation for 1-3 days, covered with tissue paper and left to stand still. If it is a tea with a heavier smell, this time may be 10-30 days, until the smell of dry tea is not obvious.

  3, into the can

Go through step 2, and then put it in a clay pot or a purple clay pot. Of course, it doesn't matter if it's not a can, and a clean carton or paper bag with no peculiar smell can achieve the same effect. Choose clay pots or purple clay pots, just because pottery can breathe. So, taking this into consideration, if the jar has been glazed, the effect of wake-up tea will obviously be much worse. From my personal opinion, a few yuan unglazed clay pot, ordinary purple clay pot, and top-quality purple clay pot; there is no difference in the wake-up tea.

The purple clay jar made of good mud, the more value lies in the play. Of course, the new wake-up tea pot also needs a treatment process, boil it in boiling water, then dry it, repeat it several times, and then it can be used to wake up the tea. A tea friend asked what the size of the tea cubes should be? In my opinion, under the premise of keeping the cords intact, the smaller the decomposition, the better. For very tight brick tea, if it can't be decomposed, at least it should be decomposed to a small piece of 7-8 grams.

  4. The end of the dry wake stage

This process, depending on the tea, takes 7 days to half a year. When making tea, we emphasize making tea and watching tea. The same is true when waking up tea, it depends on the tea itself.

  5, wet awake

After waking up, I naturally look forward to seeing the taste of tea. Don't worry, you need to wake up wet. This wet wake-up is actually what everyone calls washing tea every day. Tea washing = wake up wet? In fact, for Pu'er tea, wet awakening means more than washing tea, although it is the same process. When we emphasize on washing tea, the purpose is for hygiene, so we will consider any tea, using high temperature to wash tea. Because of high temperature disinfection. Sticking to tea washing and ignoring the meaning of waking up tea will cause fatal mistakes in brewing Pu'er tea. The taste of the brewed tea is not ideal. The process of waking up is also called moisturizing tea. Run tea, not hot tea, can be seen from the words, it is much gentler. New tea, spring tea, relatively tender tea; use about 85 degrees of water to moisturize the tea, the subsequent taste is obviously better than using water temperature above 95 degrees.

After dry awakening and wet awakening, new tea may be one week; for old tea, it may be 3-6 months; you can start to enter the wonderful drinking process. Of course, it is recommended to wake up several teas at the same time. Otherwise, if the tea is not good, months of waking up the tea will be wasted, which is really a pity.

  2. Raw tea and cooked tea

Pu'er tea is divided into two types: raw tea and cooked tea. In simple terms, raw tea is dried green tea made from Yunnan big leaf species without fermentation; cooked tea is On the basis of sun-dried green hair tea, it is made by fermentation and processing with the "Wodui" process.

Raw tea and cooked tea have different ways to wake up tea, and each has its own method. In the dry wake stage, simple clay pots and purple clay pots (with lid) are the recommended methods. The main reason why the use of clay pots or purple clay pots is emphasized is the permeability. The glaze cuts off the air.

Some tea friends emphasized that using a good purple clay pot will make the tea more effective. It is recommended that qualified tea lovers try to choose better utensils to wake up tea. In the waking phase, raw tea is very different from cooked tea. Suggested way: Use a tureen for raw tea and a purple clay pot to wake up cooked tea. The more rigorous logic is: the new raw tea uses a tureen, and the new cooked tea uses a purple clay pot.

Xinsheng tea needs to be moisturized once, and the tea is moisturized at low temperature to make the soup quickly. Freshly cooked tea is used to moisten the tea twice with a purple clay pot. Does this correspond? no! Boiled tea will be a lot of trouble, and a program needs to be added, which is the so-called "run dry water bake". First put the dry tea into a dry purple clay pot, cover the lid, rinse the body of the purple clay pot at high temperature; then shake it gently. Repeat this process twice, and then start moisturizing tea.

The reason why the new raw tea and the cooked tea use different methods is obviously because of the different tea properties. The new raw tea has less off-flavor, while the cooked tea has more off-flavor and pile flavor. The main purpose is to use purple clay teapots to remove unpleasant odors. Under normal circumstances, the taste of freshly cooked tea brewed by purple sand and tureen will be very different.

  3. A wake-up tea that is different from old tea and new tea

old tea, whether it is old raw tea or old mature tea; please use a purple clay pot to choose the above-mentioned wake-up program for newly-ripe tea. The reason is simple. Because old tea is contaminated with a lot of unpleasant flavors, it needs to be purified in a purple clay pot.

  4. Different grades of raw materials, different wake teas

new tea, tender tea, raw tea, choose a lower water temperature to moisturize the tea. For tea with more buds, use lower water temperature to moisturize the tea; for tea with fewer buds, use higher water temperature to moisturize the tea. Use lower water temperature for spring tea and higher water temperature for summer and autumn tea. By extension; court-level tea, use lower water temperature to moisturize tea; Laohuang tablets, Chenxiang brick, jujube brick, etc., use higher temperature to moisturize tea. Watch tea to make tea, watch tea to run tea, watch tea to make tea; the truth is actually the same.

The root of awakening tea is nothing more than removing the unpleasant taste and scent, so that Pu'er tea can wake up from aging and restore its true colors. Of course, many tea lovers may also have their own secret recipes. Welcome to share with us.

  5. Wake-up time before brewing

brewing Pu’er tea, discard the first, second, and third courses of tea and call it awakening tea. It takes not too long! About 10 seconds! The fourth course is for drinking, The fourth tea steeping time is 10-15 seconds! The fifth steeping time is slightly longer than the fourth steeping time, such as 10-20 seconds, and so on! The more the tea is brewed, the lighter the concentration, the longer the steeping time can be . (The specific brewing time is related to the amount of tea and the intensity of the tea you like to drink. The amount of tea is about 5 grams. There are many people who drink tea, and the amount of tea can be increased appropriately)
